Refrigerator Pickle
I LOVE pickles! Over the years, and especially during the COVID lockdowns, I have tried with out much success to can pickles. Flavors were always there, but not the crunch. Paging through the True North cookbook one day, I saw the recipe for refrigerator pickles. Figured, what the heck I will give it a shot!
These were so easy to make! Create a simple brine, slide the pickles as desired, place in jar with dill (you can also add red pepper flakes, garlic, and other herbs), fill with cooled brine and store in the refrigerator!
These pickles had that brininess that you look for and most importantly maintained that desired crunch!
